I wouldn't. That could/will pull in a lot more than just the kernel and related modules.
Too late. After the update the issue became worse. Now the system is only some minutes available before dying.
It is not clear 'how dead' it is; I see you have 3 cable connections, the USB ones should do no harm to stability, but be prepared that they could do. All should be separated galvanic connection, else I am not sure such a setup does not create an electrical loop somehow.

If you want to know more about how it dies, raise kernel loglevel and connect a serial console/debug cable and log that output to another system/computer. Combined with a watchdog you at least can keep it running 24/7 and you also then have an option to figure out what could be the root cause. It might be it is just the IP/networking connection, although I think you already ruled that out.
And first do a normal update; you run an old kernel, current is 6.6.74 and Pi5 has had quite some issues and fixes since 6.6.31.

As said many times, rpi-update script is an engineering tool, you should know what you do and be able to fix complex issues like this yourself if you start messing with kernels and firmware. Even buy/try other boards etc as your use-case can also run on a RPi3 or so, anything more or less. I ran it on a big powerhungy PC in the past for example (as virtual machine).
