OK - so answer is fairly simple.
From the shell, run
"sudo raspi-config"
then when the menu pops up select "Advanced Options - Wayland"
On this next menu pick the item A6 (switch between Wayland and X backends)
Using this method I was able to use matchbox-keyboard, xvkbd and onboard to type in xterm.
