I also am having "freezes" whenever intense SSD/SD activity takes place. File caching, opening or saving large files etc. I also have an increased swap partition, and that also probably contributes. I think a fast ssd via a "hat" would resolve such issues. USB-3 does not really cut it. I have the 4GB version of Pi 5. It is also possible that 8GB version would cause less freezes (requiring less storage cache). In my case it is the "reading and writing" that causes the freezes. I got used to live with them. Not frequent in my use case.
