Looks like your pi has a bad power supply detection sensor or something else with that hardware. IMOO the power supply stuff in the pi5 is kinda rubbish.. I don't really see why it was necessary to shut the damn board down when it just decides there is not enough power when the pi4 had no issues at all with lower amp power supplies... Good luck getting anyone to admit its faulty or even an issue here since when you bring up power issues everyone go-to is to just blast you with 'BUY THE OFFICIAL POWER BRICK' which is not even acknowledging that its an issue at all and that the 5A supply should only be required when you have high load on the usb ports.
Sorry I don't have more help for you here, you could try another supply but I think you mentioned you did that and even tried using the official one.
